A combi oven is one of the most powerful tools in a commercial kitchen, but only if it’s looked after properly. Regular cleaning isn’t just about hygiene; it protects your oven’s lifespan, ensures consistent cooking results, and avoids costly breakdowns.

In this guide, we’ll walk you through how to clean your combi oven correctly, whether you’re using a Rational, Lincat, Unox, or Convotherm model.

Why Cleaning Matters

Skipping or delaying oven cleaning can lead to:

Daily Combi Oven Cleaning Checklist

Most modern combi ovens have automated cleaning cycles—but there’s still some manual work needed. Here’s a daily routine:

Step 2: Remove Accessories

Take out racks, trays, and shelf supports. Clean these separately with hot soapy water or in a dishwasher if rated safe.

Step 3: Wipe Down the Interior
