A combi oven is one of the most powerful tools in a commercial kitchen, but only if it’s looked after properly. Regular cleaning isn’t just about hygiene; it protects your oven’s lifespan, ensures consistent cooking results, and avoids costly breakdowns.

In this guide, we’ll walk you through how to clean your combi oven correctly, whether you’re using a Rational, Lincat, Unox, or Convotherm model.

Why Cleaning Matters

Skipping or delaying oven cleaning can lead to:

Limescale build-up, especially in steam generators 
Burnt-on grease affecting airflow and heat distribution

Daily Combi Oven Cleaning Checklist

Most modern combi ovens have automated cleaning cycles — but there’s still some manual work needed. Here’s a daily routine:

Let It Cool: Always wait for the oven to cool down slightly before starting. Follow your oven’s shutdown procedure first.

Remove Accessories: Take out racks, trays, and shelf supports. Clean these separately with hot soapy water or in a dishwasher if rated safe.

Wipe Down the Interior: Use a soft cloth or sponge with warm water to wipe away loose food debris, grease, and drips. Avoid abrasive pads or metal scrapers, these can damage stainless steel surfaces and coatings.

Run the Self-Cleaning Cycle (if equipped): If your oven has a built-in cleaning program (e.g., Rational’s CareControl or Unox Rotor.KLEAN™), follow the prompts. Choose the correct cleaning intensity (light, medium, heavy), insert the proper cleaning tabs or detergent cartridge and let the oven complete its full cycle and cool before reopening.

Wipe Door Seals: Use a damp cloth with mild cleaner to clean rubber seals and the inside of the door glass, these areas can harbour grease and mould.

Weekly Deep Clean

Once a week, go beyond daily cleaning:

Descale steam generator (if not auto-descaling) – Use a descaler recommended by your oven’s manufacturer.
Clean the drip tray & drain – Food and grease build up quickly here and can cause blockages.
Check fan guards filters – Remove and clean them if accessible.
Inspect door seals for wear – Cracked seals can affect steam control and efficiency.

What Not to Do

Don’t use bleach or corrosive chemicals – These damage sensors and stainless steel 
Don’t spray directly into the fan – Liquid can get into internal electronics
Don’t ignore manufacturer instructions – Always follow the brand-specific care guide
