No Wi-Fi, No Problem
This week, hackers switched off the refrigeration units in supermarkets and food businesses across Europe. Fridges and freezers at supermarkets in at least 11 countries were remotely heated up, spoiling tonnes of food.
The UK wasn't spared. Several independent meat suppliers saw their fridges start defrosting overnight, and one unit climbed to 100°C. An organic fruit and veg wholesaler had six of its ten fridges tampered with and only stopped it by pulling the network cable.
The common thread? Refrigeration controls that were reachable from the internet, in some cases still using default passwords. The advice from security experts was blunt: if your equipment doesn't need to be online, take it offline.
It's a wake-up call for every commercial kitchen. The more equipment you connect, the more doors you open. And it raises a fair question for anyone buying a combi oven: does it actually need to be connected at all?
Why an older RATIONAL might be the smarter buy
The refurbished RATIONAL SelfCookingCenter ovens we sell and rent don't need an internet connection to do their job. Out of the box, they run fully offline. That brings four real advantages.
1. Security and simplicity. An oven that isn't on your network can't be reached through it. There's no cloud account, no app login and no reliance on manufacturer servers staying up. It turns on, it cooks, and it stays out of your IT department's way.
2. Reliability. These are proven designs that chefs have trusted for years. Their weak points are well known, parts are easy to get, and our engineers know them inside out. We keep our vans stocked with the parts they need, which is a big reason we hit a 99.4% first-time fix rate.
3. Cost. A refurbished RATIONAL costs a fraction of a new one, with the same core cooking performance. You can spread the cost with iwoca finance, or rent one on a long-term contract if you're in London or the South East. There are no ongoing software costs or updates to manage.
4. Sustainability. Refurbishing keeps good, working equipment out of landfill and avoids the carbon cost of manufacturing a new oven from scratch.
One honest caveat: some later SelfCookingCenter models can be networked by cable. Offline is the default, but if yours has been connected, the same advice applies as for any kitchen kit. Change default passwords, keep it off the public internet, and only connect what you need to.
When is a new iCombi the better choice?
Connected kit isn't the enemy. Set up properly, it brings real benefits, and for some kitchens a new RATIONAL iCombi is the right call. It usually is when the kitchen gets genuine value from connectivity, automation and a long life ahead of it.
- Multi-site operators. ConnectedCooking lets head office push recipes to every site, check equipment remotely and keep food consistent across locations.
- Compliance-heavy kitchens. Care homes, hospitals and schools benefit from automatic HACCP logging, which saves paperwork and makes audits easier.
- High-volume, mixed-menu service. iProductionManager plans mixed loads and tells staff when to load and unload, keeping busy services on track.
- Long-term fit-outs. A new oven comes with a full manufacturer warranty and the longest life ahead of it, which suits a new site planning to stay ten years or more.
If you go connected, treat your oven like any other device on your network: strong passwords, regular updates and no direct exposure to the public internet.
The final word
The best oven isn't always the newest one. It's the one that suits how your kitchen actually works. For most single-site restaurants, pubs and cafés, a refurbished RATIONAL that runs offline gives you top-tier cooking with one less thing to worry about.
