A refurbished Rational combi oven is one of the best value investments a commercial kitchen can make. You get the reliability and performance of a machine built to last, at a fraction of the cost of new. But there's one step buyers sometimes underestimate, and it's the step that determines whether that investment pays off or turns into a costly headache: professional installation.
We've seen it happen more than once. A customer buys a fantastic oven, arranges for "someone" to connect it (a handyman, a mate who's "good with this sort of thing," or even attempts it themselves), and within weeks something's gone wrong. In the worst cases, the oven won't fire up properly. In the most serious cases, it's a safety risk. And in almost every case, it means the manufacturer's warranty is void.
Here's why proper installation isn't optional:
It's a legal requirement, not just best practice
Combi ovens run on gas or electric, and both come with strict rules:
- Gas-powered ovens must be connected by a Gas Safe registered engineer. This isn't a suggestion, it's a legal requirement in the UK for any commercial gas appliance. An unregistered installation is not just risky, it's illegal, and your insurance is unlikely to cover any incident that results from it.
- Electric ovens typically need a qualified electrician to handle the correct power supply, isolation, and wiring. Combi ovens draw serious current, and getting this wrong can trip your whole kitchen's circuit, damage the unit, or create a genuine fire hazard.
Beyond the connection itself, a combi oven also needs correct water supply and drainage, adequate ventilation, and levelling; all things a qualified engineer checks as standard, and all things that affect how well (and how long) your oven runs.
Improper installation invalidates your warranty
Every refurbished oven we supply comes with a minimum 3 months parts extendable* warranty, but that warranty is conditional on correct commissioning by a qualified engineer. If an oven is installed incorrectly and something goes wrong, Rational (or we, as your supplier) simply cannot honour a warranty claim. This means you could be facing a repair bill for damage that a compliant install would have prevented entirely.
It's a frustrating position to be in: you did the right thing by choosing a well-maintained, professionally refurbished oven, only to lose that protection because of how it was connected on site.
The performance risks of a DIY or unqualified install
Even when there's no immediate safety issue, poor installation quietly undermines the oven's performance:
- Incorrect gas pressure or electrical supply can cause inconsistent cooking, longer preheat times, or error codes.
- Poor water connection or filtration accelerates limescale build-up, which is one of the most common causes of avoidable combi oven breakdowns.
- Insufficient ventilation or clearance causes overheating and can shorten the life of internal components significantly.
- Uneven installation affects steam distribution and drainage, both of which are central to how a combi oven actually cooks.
None of these show up on day one. They show up three months in, as "unexplained" faults, at which point diagnosing the real cause (a bad install, not a bad oven) takes longer and costs more.
What proper installation actually involves
When one of our engineers installs a combi oven, it's not just plugging it in. It includes:
- Confirming gas or electrical supply matches the oven's specification
- Correct, code-compliant connection by a Gas Safe engineer or qualified electrician
- Water supply and drainage connection, including filtration where needed
- Levelling and ventilation checks
- A full commissioning run: testing steam, fan, and core functions before the oven is signed off
- Talking you through basic operation and maintenance on day one
This is also the point where small issues (a slightly undersized gas run, an awkward drainage route) get caught and resolved before they become "why has my oven stopped working" calls six weeks later.
We recently supported a customer who'd done everything right on paper. She purchased a refurbished Rational gas combi oven and arranged for a Gas Safe registered engineer to install it, exactly what we'd always recommend.
The problem: the engineer connected the oven to her natural gas supply without converting it from LPG. Rational ovens are built for a specific gas type, and switching between LPG and natural gas isn't just a pipework connection; it requires fitting the correct injectors for that gas type and re-adjusting the burner settings to match. Skip that step, and the oven is running on the wrong setup entirely, which is exactly why it wouldn't fire correctly.
The engineer was genuinely Gas Safe registered and qualified for general commercial gas work, but combi oven gas conversions are a specific, model-specific procedure that not every gas engineer will be familiar with unless they regularly work with catering equipment.
The takeaway: it's not just whether an engineer installs your oven, but whether they're the right kind of engineer for catering equipment specifically. Always confirm gas type conversion has been carried out where needed, before the oven is signed off.
